Ingredients

  • 125 g unsalted butter melted
  • 3/4 cup caster sugar
  • 3 bananas ripe roughly chopped
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups self-raising flour sifted
  • 1 cup desiccated coconut
  • 1/2 cup dark chocolate chips
  • 1 tbs icing sugar *to decorate

Method

  • Step 1
    Preheat oven to 200°C and grease a 12-hole mini-muffin pan.
  • Step 2
    Process butter, caster sugar, banana, eggs and vanilla in a bowl or food processor until well combined.
  • Step 3
    Place flour, coconut and chocolate in a large bowl, then fold in banana mixture.
  • Step 4
    Working in batches, place dessert spoons of mixture into pan. Bake for 15 minutes or until risen and golden.
  • Step 5
    Cool slightly in pan, then turn out onto a rack to cool completely. Repeat with remaining batter.
  • Step 6
    Serve dusted with icing sugar.
