Another great idea for the lunch box!
Ingredients
- 125 g unsalted butter melted
- 3/4 cup caster sugar
- 3 bananas ripe roughly chopped
- 2 eggs
- 1 tsp vanilla extract
- 2 cups self-raising flour sifted
- 1 cup desiccated coconut
- 1/2 cup dark chocolate chips
- 1 tbs icing sugar *to decorate
Method

Step 1Preheat oven to 200°C and grease a 12-hole mini-muffin pan.

Step 2Process butter, caster sugar, banana, eggs and vanilla in a bowl or food processor until well combined.

Step 3Place flour, coconut and chocolate in a large bowl, then fold in banana mixture.

Step 4Working in batches, place dessert spoons of mixture into pan. Bake for 15 minutes or until risen and golden.

Step 5Cool slightly in pan, then turn out onto a rack to cool completely. Repeat with remaining batter.

Step 6Serve dusted with icing sugar.
