A quick and easy biscuit to bake when you are in need of a home-cooked treat. Perfect with a cup of tea, in a school lunch box or at a work morning tea.
Ingredients
Biscuits
- 125 g butter softened
- 1 cup brown sugar
- 1 egg
- 1/2 cup banana mashed ripe
- 1 1/2 cup self-raising flour
- 1 cup rolled oats
- 1/2 cup sultanas
- 1/2 cup walnuts pieces
- 1 cup coconut shredded
Method

Step 1Preheat oven to 180C. Line 2 large oven trays with grease-proof paper.

Step 2Cream together the butter and sugar until pale and fluffy. Add in the egg and beat well until combined, add in the banana and beat for a few seconds to mix through.

Step 3In another bowl, sift in the flour, then add the oats, sultanas and walnuts. Mix well to combine, then add the dry mix into the butter and sugar and fold through gently until all the flour is mixed through.

Step 4Place the coconut into a bowl. Roll a tablespoon of the mixture into a ball and roll the ball into the shredded coconut to coat. Repeat until all the mixture has been rolled. Place the balls onto the baking tray about 5cm apart and gently flatten with a fork. Bake for 20-25 minutes, until golden. Cool on a wire rack and enjoy!

Recipe Notes
When baking, place 6 balls of the mixture per tray - as they will expand. You can make smaller biscuits if you like. The biscuits will keep in an air tight container for a few days, or you can freeze them to take to work for a snack on-the-go.
