Ingredients

  • 5 egg whites
  • 1 1/4 cups caster sugar
  • 1 1/2 tsp vanilla essence
  • 1 1/2 tsp white vinegar
  • 1 1/2 tbs cornflour
  • 1 pinch salt

Method

  • Step 1
    Preheat oven to 120C.
  • Step 2
    Beat eggs whites until stiff.
    Classic Pavlova
  • Step 3
    Add caster sugar slowly and then salt.
  • Step 4
    Beat for a further 5 minutes until thick, stiff peaks form.
  • Step 5
    Beat in vanilla and vinegar, then fold in cornflour.
  • Step 6
    Spoon mixture onto a baking paper covered tray, shape into a 20 cm circle and pile high.
  • Step 7
    Bake for about 1-1½ hours and let cool in the oven with door ajar.
  • Step 8
    When cool cover top with whipped cream and toppings of choice.
Recipe Notes

Great topped with fresh fruit, or a crushed chocolate bar.
