These classic cupcakes are a delicious afternoon treat for the whole family to enjoy, plus they are a hit at tea parties. Unfortunately they don't last very long.
Ingredients
- 2 cup self-raising flour sifted
- 3/4 cup caster sugar
- 3/4 cup milk
- 125 g butter cooled melted
- 2 egg beaten
- 1 tsp vanilla essence
Icing
- 1 1/2 cup icing sugar
- 1 tsp liquid food colouring
- 1 1/2 tbs water
Method

Step 1Preheat oven to 200C and line a 12 capacity cupcake pan with paper cases.

Step 2Combine flour and sugar in a large mixing bowl.

Step 3Make a well in the centre and add the milk, butter, eggs, and vanilla essence.

Step 4Using a large metal spoon, gently stir to combine.

Step 5Spoon mixture into the prepared cupcake pan and bake for 12-15 minutes.

Step 6Stand in pan for 5 minutes before transferring to a wire rack to cool.

Step 7Icing: Sift icing sugar into a bowl.

Step 8Add food colouring and water and stir until smooth and well combined.

Step 9Spoon icing over cupcakes.
