These classic cupcakes are a delicious afternoon treat for the whole family to enjoy, plus they are a hit at tea parties. Unfortunately they don't last very long. - Hot_Bite18

Ingredients

  • 2 cup self-raising flour sifted
  • 3/4 cup caster sugar
  • 3/4 cup milk
  • 125 g butter cooled melted
  • 2 egg beaten
  • 1 tsp vanilla essence

Icing

  • 1 1/2 cup icing sugar
  • 1 tsp liquid food colouring
  • 1 1/2 tbs water

Method

  • Step 1
    Preheat oven to 200C and line a 12 capacity cupcake pan with paper cases.
  • Step 2
    Combine flour and sugar in a large mixing bowl.
  • Step 3
    Make a well in the centre and add the milk, butter, eggs, and vanilla essence.
  • Step 4
    Using a large metal spoon, gently stir to combine.
  • Step 5
    Spoon mixture into the prepared cupcake pan and bake for 12-15 minutes.
  • Step 6
    Stand in pan for 5 minutes before transferring to a wire rack to cool.
  • Step 7
    Icing: Sift icing sugar into a bowl.
  • Step 8
    Add food colouring and water and stir until smooth and well combined.
  • Step 9
    Spoon icing over cupcakes.

  • 1 12-hole cupcake pan
