How to make my Christmas cheese Yule log: key tips
You can make this well ahead of time (up to 2 days) and store wrapped in baking paper and plastic wrap in the fridge. If you’re finding it difficult to mix the cheeses together, let them sit at room temperature for 10 minutes and then continue to mix. Chill the wrapped log for at least 30 minutes, but longer is even better. Cold cheese holds its shape, rolls neatly and cuts more tidily.

Honey, pecans, cream cheese, goats cheese, parsley and cranberry form this Christmas stunner. Omit the goat's cheese if you prefer – it gives the cheese log an extra depth but can be divisive! Ingredients
- 2 tbsp honey, plus extra to serve
- 1/2 cup pecans
- 500g cream cheese
- 110g log goats cheese
- 1/4 cup finely chopped Italian parsley
- 1/4 cup roughly chopped dried cranberries
Method

Step 1Place honey in a small frypan over gentle heat. Bring to the boil, then reduce heat and add pecans. Stir to coat well. Transfer to a plate lined with baking paper and leave to cool.

Step 2In a large bowl, use a fork to combine cream cheese and goats cheese until smooth. Scoop out onto a large sheet of plastic wrap and form into a log shape. Roll and wrap in plastic wrap and refrigerate for at least 30 minutes.

Step 3Roughly chop honey-coated pecans. Combine with parsley and cranberries in a bowl. Sprinkle on a sheet of baking paper. Carefully unwrap cheese log and turn out onto baking paper. Use the baking paper to roll the cheese in the nut mixture until it is well coated on all sides. Transfer to a serving board or plate. Drizzle with extra honey just before serving.
