Decorate your next batch of chewy chocolate brownies with some glace cherries and leaves for a touch of Christmas spirit!
Ingredients
- 125g butter
- 125g dark chocolate
- 1 1/2 cups brown sugar
- 3 eggs
- 1 tsp vanilla essence
- 3/4 cup plain flour
- 1/4 cup cocoa
- 1 cup icing sugar
- 1 tbsp cocoa, extra
- 1 tbsp soft butter, extra
- 2 tbsp milk
- 12 glace cherries
- 1 tbsp caster sugar
- 12 spearmint leaf lollies
Method

Step 1Preheat oven to 170C. Line an 18cm x 25cm slice tin with baking paper.

Step 2Place butter and dark chocolate in a medium bowl over a saucepan of simmering water and allow to melt. Remove and whisk in sugar, followed by eggs and vanilla essence. Fold through flour and cocoa. Pour into prepared tin. Bake for 30 minutes. Remove from oven and allow to cool.

Step 3Meanwhile, sift icing sugar and extra cocoa into a bowl. Add extra butter and enough milk to form a spreadable consistency. Spread over cooled brownie. Use a large knife to mark squares in the top of the brownie - you will have 3 x 4, so 12 in total.

Step 4Toss glace cherries in caster sugar and place one in each square. Cut spearmint leaves in half and arrange next to cherries. When icing has set, slice into squares to serve.
Recipe Notes
You can use green ‘writing’ icing instead of spearmint leaves to create the decorations.
You don’t necessarily need the chocolate icing but it provides a nice cushion for the cherry decoration.
