This meal is best cooked in an enameled cast iron casserole pot.
Ingredients
- 3 chorizo sausage
- 4 potato medium peeled
- 3 garlic clove finely chopped
- 1 onion finely chopped
- 2 tbs olive oil
- 2 bay leaf
- 1 tsp paprika
- 500 g French fresh beans trimmed
- 1 L water
Method

Step 1Cut chorizo, potatoes and beans into bite-size pieces.

Step 2Sauté chorizo, garlic and onion for five minutes.

Step 3Add potato, beans, bay leaf and paprika, and sauté for a further five minutes.

Step 4Add enough water to just cover and simmer, uncovered, stirring occasionally until potato is tender and sauce has thickened.

Step 5Add salt.

Step 6Remove bay leaves before serving.
