Ingredients

  • 3 chorizo sausage
  • 4 potato medium peeled
  • 3 garlic clove finely chopped
  • 1 onion finely chopped
  • 2 tbs olive oil
  • 2 bay leaf
  • 1 tsp paprika
  • 500 g French fresh beans trimmed
  • 1 L water

Method

  • Step 1
    Cut chorizo, potatoes and beans into bite-size pieces.
  • Step 2
    Sauté chorizo, garlic and onion for five minutes.
  • Step 3
    Add potato, beans, bay leaf and paprika, and sauté for a further five minutes.
  • Step 4
    Add enough water to just cover and simmer, uncovered, stirring occasionally until potato is tender and sauce has thickened.
  • Step 5
    Add salt.
  • Step 6
    Remove bay leaves before serving.
Recipe Notes

Use semi-dried chorizo sausage and waxy potato.
