A spicy and filling meal for when the fridge is bare and you're really in a hurry!
Ingredients
- 500 g chicken breast fillet diced
- 1 onion chopped medium
- 3 cup green beans sliced
- 2 tsp extra virgin olive oil
- 70 g rogan josh Indian curry paste
- 100 ml water
- 1 lime quartered
- 2 cup rice *to serve
Method

Step 1Heat oil in a pan over medium-high heat.

Step 2Cook the onion, then add the chicken and turn until seared.

Step 3Add Rogan Josh paste and water, and mix well.

Step 4Add beans, mix thoroughly.

Step 5Turn heat down and simmer until sauce thickens, stirring occasionally.

Step 6Serve on a bed of rice, garnished with wedges of lime.
Recipe Notes
I used Patak's brand paste, and 70 g equals about a quarter of the jar. Add extra vegetables to this dish if you like.
