This is a great way to use up some of this vegetable which we have in abundance at the moment. It was given to me by an elder lady friend who is one of the great stalwarts of our country and we had to cook with what was in season. Hope it is enjoyed.
Ingredients
- 3 egg
- 1 tsp vanilla essence
- 1 cup peanut oil
- 3 cup plain flour
- 1 1/2 cup sugar
- 1 tsp salt
- 1 tsp bicarbonate of soda
- 1/4 tsp baking powder
- 3 tsp ground cinnamon
- 2 cup chokoes grated peeled
- 1 cup walnuts chopped
Method

Step 1Beat together eggs, oil and vanilla.

Step 2Add sugar and chokos, mix well.

Step 3Sift together flour, salt, cinnamon, bicarbonate of soda and baking powder.

Step 4Fold egg and choko mixture into dry ingredients.

Step 5Add chopped walnuts and mix through.

Step 6Divide mixture between 2 lined or greased loaf pans.

Step 7Bake at 180C for 80 minutes or until cooked through.
