This simple no-bake recipe is perfect for school holiday fun or for when the kids are begging for a sweet treat.
Ingredients
- 250g milk arrowroot biscuits
- 200g condensed milk
- 125g butter
- 1 cup desiccated coconut
- 3 tbsp cocoa powder
- Chocolate freckles, to decorate

Step 1Line a lamington pan with baking paper.

Step 2Place the condensed milk and butter into a microwave safe container, and heat on high for 1 minute, 30 seconds.

Step 3Pulverise the milk arrowroot biscuits in a food processor or thermocooker. (Note: You can also place the biscuits in a plastic bag and pulverise with a rolling pin).

Step 4Put the biscuit crumbs into a bowl, and add the coconut and cocoa. Make a well in the centre, and then stir in the melted condensed milk and butter mixture.

Step 5Tip the mixture into the lamington tin, and press down. I like to use the back of a spatula, but you can use a spoon or even a glass. Gently press in 12 chocolate freckles.

Step 6Refrigerate for around 1 hour or until firm.

(Plus one hour setting time).
Use just under half a 395g tin of condensed milk.
