Chocolate pudding with a raspberry jam base.
Ingredients
- 4 tbs butter
- 1/2 cup brown sugar
- 1 cup self-raising flour
- 2 tbs cocoa
- 1/2 cup milk
- 1/2 cup desiccated coconut
- 1/2 tsp vanilla extract
- 1/2 cup raspberry jam
Method

Step 1Preheat oven to 180C.

Step 2Cream butter and sugar together.

Step 3Sift flour and cocoa together, and add to butter and sugar.

Step 4Add milk, coconut and vanilla and mix together.

Step 5Grease oven proof dish, and spread jam over base.

Step 6Spread chocolate mix to cover the jam.

Step 7Bake for 30-35 minutes.
Recipe Notes
Allow to cool slightly before serving. Delicious served with cream or ice cream. Just as good served cold or at room temperature.
