You won’t go back to regular rocky road after you try this choc mint version. Add a selection of mint-flavoured lollies, chocolate and biscuits to melted chocolate - you’ll want to keep the whole thing for yourself.
Ingredients
- 290g dark chocolate melts
- 200g pkt Arnott’s Mint Slice biscuits
- 118g block Nestle* Aero Mint
- 2 x 35g Peppermint Crisp bars
- 170g pkt spearmint leaves
- 290g white chocolate melts
- Green food colouring
- 185g Darrell Lea Minty Crunchy Chocolate Balls

Step 1Line an 18cm x 25cm slice tin with baking paper.

Step 2Melt dark chocolate in short bursts in the microwave until smooth. Place in a large bowl. Add chopped Mint Slice biscuits, broken Aero Mint, chopped Peppermint Crisp and spearmint leaves. Stir until just combined and pour into prepared tin and smooth into an even layer. Allow to set.

Step 3Melt white chocolate in short bursts in the microwave. Add just enough food colouring to create a minty green colour. Pour over dark chocolate mixture in tin. Dot the top with whole and halved Minty Crunchy Chocolate Balls. Refrigerate until set, then cut into wedges.
Recipe Notes
Prep all of your filling ingredients and add them all at once to the melted chocolate so it doesn’t set too quickly. A quick stir and transfer to the tin to set. It will look very messy and ugly at this stage, but it’s all about the flavour!
The minty ingredients I chose are the perfect combo of chewy, crunchy and crispy.
