A crisp, crunchy biscuit.
Ingredients
- 125 g butter chopped
- 1/2 cup caster sugar
- 1 egg
- 1/2 tsp vanilla essence
- 1 cup self-raising flour
- 2 cup Cornflakes
- 1/2 cup milk chocolate chips
- 1/4 cup sultanas
- 1/4 cup dried apricots chopped
Method

Step 1Cream butter and sugar until light and fluffy.

Step 2Add the egg and vanilla, mix well.

Step 3Fold in the flour, then mix in the cornflakes, choc chips, sultanas and apricots.

Step 4Drop walnut-sized portions of the mixture onto greased baking trays.

Step 5Bake in a moderate oven for 15 to 20 minutes or until golden.
