Ingredients

  • 125 g butter chopped
  • 1/2 cup caster sugar
  • 1 egg
  • 1/2 tsp vanilla essence
  • 1 cup self-raising flour
  • 2 cup Cornflakes
  • 1/2 cup milk chocolate chips
  • 1/4 cup sultanas
  • 1/4 cup dried apricots chopped

Method

  • Step 1
    Cream butter and sugar until light and fluffy.
  • Step 2
    Add the egg and vanilla, mix well.

  • Step 3
    Fold in the flour, then mix in the cornflakes, choc chips, sultanas and apricots.
  • Step 4
    Drop walnut-sized portions of the mixture onto greased baking trays.
  • Step 5
    Bake in a moderate oven for 15 to 20 minutes or until golden.
