Chinese omelette with sauce.
Ingredients
- 6 eggs
- 4 mushrooms diced
- 4 eschalots diced
- 1 cup bean sprouts chopped
- 1/2 cup ham (deli) diced
- 1 tsp soy sauce
- 1/2 tsp ground ginger
- 1 cup green prawns optional
- 1 cup cooked chicken diced optional
Sauce
- 1 tsp cornflour
- 2 chicken stock cubes
- 1/2 tsp ground ginger
- 1 cup water
- 2 tsp soy sauce
Method

Step 1Omelette: Fry all omelette ingredients in a large frying pan, except the eggs and soy sauce.

Step 2Remove from pan and divide into three equal portions.

Step 3Whisk eggs, add soy sauce and whisk again.

Step 4Divide egg mixture into three equal portions.

Step 5Return one portion of fried ingredients to pan and reheat.

Step 6Pour over 1 portion of egg mix.

Step 7When egg mix looks cloudy roll omelette and tilt onto plate.

Step 8Repeat with remaining two portions.

Step 9Sauce: Mix all ingredients and heat until thick. Pour over each omelette.
