Ingredients

  • 6 eggs
  • 4 mushrooms diced
  • 4 eschalots diced
  • 1 cup bean sprouts chopped
  • 1/2 cup ham (deli) diced
  • 1 tsp soy sauce
  • 1/2 tsp ground ginger
  • 1 cup green prawns optional
  • 1 cup cooked chicken diced optional

Sauce

  • 1 tsp cornflour
  • 2 chicken stock cubes
  • 1/2 tsp ground ginger
  • 1 cup water
  • 2 tsp soy sauce

Method

  • Step 1
    Omelette: Fry all omelette ingredients in a large frying pan, except the eggs and soy sauce.

  • Step 2
    Remove from pan and divide into three equal portions.
  • Step 3
    Whisk eggs, add soy sauce and whisk again.
  • Step 4
    Divide egg mixture into three equal portions.
  • Step 5
    Return one portion of fried ingredients to pan and reheat.
  • Step 6
    Pour over 1 portion of egg mix.
  • Step 7
    When egg mix looks cloudy roll omelette and tilt onto plate.
  • Step 8
    Repeat with remaining two portions.
  • Step 9
    Sauce: Mix all ingredients and heat until thick. Pour over each omelette.

  • 1 frying pan
  • 1 whisk
