Absolutely beautiful with a BBQ.
Ingredients
- 2 lime shredded
- 1 1/2 cup red capsicum coarsely chopped
- 2 cloves garlic thinly sliced
- 1 tsp ginger fresh grated
- 1/2 cup long red chilli deseeded thinly sliced
- 1 1/2 cup tomato diced ripe
- 2 tbs lime juice
- 2 cup caster sugar
Method

Step 1Place a saucer in the refrigerator to chill.

Step 2Combine the capsicum, garlic, ginger, chillies, tomatoes, lime rind and lime juice in a large 14-cup capacity microwave-safe glass bowl.

Step 3Cook, uncovered, on high power for 8 minutes. Stir in sugar until dissolved.

Step 4Cook, uncovered, on high power for approximately 20 minutes, or until jam jells when tested on the chilled saucer.

Step 5Pour jam into hot sterilised jars and seal while jam is still hot. Refrigerate after opening.

Recipe Notes
You will need approximately 1 tablespoon of shredded lime rind. Fantastic jam, well received wherever I serve it, great with lamb, steaks or chicken. Shred limes into long strips.
