These Mexican-inspired chilli tortillas are made with beef mince, tasty cheese and a hint of spice! They are oven baked for a moist, flavourful middle and crispy, cheesy top.
Ingredients
- 600g beef mince
- 35g taco seasoning
- 1 cup water
- 500g pasta sauce
- 10 tortillas medium
- 3/4 cup sour cream light
- 3/4 cup tasty cheese grated
Method

Step 1Preheat the oven to 180C.

Step 2Add mince to a heated, greased frypan and stir over med-high heat until mince is browned all over.

Step 3Stir in taco seasoning, water and half the pasta sauce.

Step 4Bring to the boil, reduce the heat and simmer, uncovered, for about 20 minutes, or until mixture has reduced and thickened.

Step 5Divide the beef mixture over each tortilla, then roll up into a cylinder to enclose.

Step 6Arrange the rolled tortillas in a single layer in a large ovenproof dish.

Step 7Spoon over the remaining pasta sauce, then the sour cream.

Step 8Sprinkle with cheese, cover with foil and bake for 15 minutes.

Step 9Remove foil and bake for a further 10-15 minutes or until cheese has lightly browned.

Recipe Notes
Serve with chips and salad for a lovely, hearty meal. Use pasta sauce of choice (I'd recommend the capsicum and chilli variety), and medium-sized soft flour tortillas.
