This recipe is great when made in advance the night before. As a busy working mother, meal times can be quite stressful, but I feel this recipe in particular eliminates all the stress. When I marinate it overnight, all that's left to do is to thread the meat and cook it. This way the family can enjoy quick, easy and yet very tasty meals.
Ingredients
- 1 kg (fillets) chicken thighs
- 4 cloves garlic
- 2 tbs plain yoghurt
- 1/2 tsp paprika
- 1/4 tsp curry powder
- 1/4 tsp oregano
- 1/2 tsp salt
- 1/2 tsp chilli flakes
- 1/4 cup oil
- 5 g parsley chopped
Method

Step 1Soak the skewers in boiling water for 10 minutes.

Step 2Cut the chicken thigh fillets into 3 cm cubes.

Step 3In a large bowl, mix the chicken, crushed garlic, yogurt, paprika, curry powder, oregano, salt, chilli flakes and oil. Make sure all the chicken has been coated with the marinate.

Step 4Cover with some glad wrap and refrigerate for 2 hours.

Step 5Thread through the chicken pieces on skewers. 3-4 chicken pieces will be sufficient for each skewer.

Step 6Heat an iron plate for three minutes. Place the chicken skewers on the plate grill for 4-5 minutes on each side or until cooked through and golden brown.

Step 7Serve on a bed of rice accompanied with salad and garnish with chopped parsley.
Recipe Notes
Chicken thigh fillets can be swapped for Maryland fillets. Pepper paste can be used instead of chilli flakes. I like to make steps 1-4 a day in advance as it makes dinner quicker leaving only the cooking part.
