All-in-one microwave meal.
Ingredients
- 1 1/2 kg chicken thighs
- 1/4 cup plain flour
- 2 bacon rashers finely chopped
- 1 green capsicum diced
- 1 onion finely chopped
- 425g canned whole tomatoes peeled
- 2 tbs tomato paste
- 2 chicken stock cubes
- 1 tbs soy sauce
- 1/2 tsp salt and pepper
- 200g mushrooms
Method

Step 1Coat chicken thighs in flour.

Step 2Combine all ingredients, except for mushrooms, in a 3 Litre casserole dish.

Step 3Cover and cook for 27-30 minutes on medium-high. Stir 2-3 times during cooking.

Step 4Add mushrooms, then cook uncovered, for a further 5-7 minutes.
