This pie warms the heart and is best shared with plenty of good company!
Ingredients
- 400 g mushrooms sliced
- 3 chicken breast fillet
- 1 leek thinly sliced
- 125 g butter
- 1 cup milk
- 1/2 cup plain flour
- 1 pinch seasoning *to taste
- 4 sheets puff pastry
- 1 egg lightly beaten
Method

Step 1Melt one tablespoon of butter into a large frying pan over a medium heat.

Step 2Slice the chicken breast in half through the middle and place into the pan to cook.

Step 3Once chicken is cooked through, cool for 5 minutes.

Step 4Add the leek and mushrooms to the pan and cook for 5 minutes, stirring often. Season with black pepper and salt.

Step 5Melt a generous tablespoon of butter in a saucepan.

Step 6Add the flour stirring the butter and flour into a paste.

Step 7Add milk slowly to the mixture, stirring constantly to avoid lumps. Continue to stir until sauce thickens. Allow to cool.

Step 8Roughly chop chicken breasts and add to the mushroom and leek mixture, along with the white sauce. Mix everything together and set aside.

Step 9Preheat the oven to 220C

Step 10Line a round pie pan with egg wash and then line with pastry.

Step 11Place cooled filling into the pie, then cover the top with another sheet of pastry, cutting the edges to fit if necessary.

Step 12Cut a steam hole in the middle and bake for 35 minutes, or until the top is golden brown.
Recipe Notes
Let cool before putting in the fridge if you are making for a later time. Putting the pastry in the fridge while still warm ruins the pastry.
