A light lunchbox treat.
Ingredients
- 1/2 chicken breast fillet
- 250 g pasta cooked drained
- 1 celery stalk
- 1 carrot grated
- 10 g rocket leaves
- 120 g cherry tomato halved
- 120 g baby bocconcini drained
- 1/2 cup Italian salad dressing
Method

Step 1Dry-fry the chicken, cool and chop.

Step 2In a large bowl, mix all ingredients together.

Step 3Divide into lunchboxes.

Makes 2 x full 1-litre boxes. I use Taylor's Italian dressing.
