This simple stir-fry is packed with flavour and takes minutes to throw together using mostly pantry staples.
Ingredients
- 3-4 chicken breasts
- 2 cloves garlic
- 2 shallots
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tsp grated ginger
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 2 tbsp shao hsing Chinese wine
Method

Step 1Thinly slice chicken breasts. Peel garlic and slice thinly. Peel shallots and slice the white and pale green parts. Slice the dark green parts and set aside for garnish.

Step 2In a small bowl, combine soy sauce, oyster sauce, ginger and sesame oil.

Step 3Heat vegetable oil in a frypan or wok. Stir-fry chicken in batches, removing to a plate when just done. Add a little more oil if required, then stir-fry garlic and shallots for 1 minute. Return chicken and toss to combine, then add shao hsing and stir well. Pour in sauce mixture and continue cooking, tossing and stirring, for 3-4 minutes until sauce has reduced, and chicken is well coated and completely cooked through.

Step 4Serve with rice, garnished with reserved green shallots.
Recipe Notes
This is delicious with broccolini as well.
Use 3 large or 4 small chicken breasts, or purchase a pre-packaged stir-fry mix.
