Ingredients

  • 3-4 chicken breasts
  • 2 cloves garlic
  • 2 shallots
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 2 tbsp shao hsing Chinese wine

Method

  • Step 1
    Thinly slice chicken breasts. Peel garlic and slice thinly. Peel shallots and slice the white and pale green parts. Slice the dark green parts and set aside for garnish.
  • Step 2
    In a small bowl, combine soy sauce, oyster sauce, ginger and sesame oil.
  • Step 3
    Heat vegetable oil in a frypan or wok. Stir-fry chicken in batches, removing to a plate when just done. Add a little more oil if required, then stir-fry garlic and shallots for 1 minute. Return chicken and toss to combine, then add shao hsing and stir well. Pour in sauce mixture and continue cooking, tossing and stirring, for 3-4 minutes until sauce has reduced, and chicken is well coated and completely cooked through.
  • Step 4
    Serve with rice, garnished with reserved green shallots.
Recipe Notes

This is delicious with broccolini as well.

Use 3 large or 4 small chicken breasts, or purchase a pre-packaged stir-fry mix.
