A moist chicken dish.
Ingredients
- 6 chicken breast fillet medium
- 8 zucchini grated medium
- 1 packet soup mix
- 1 cup fresh breadcrumbs
- 300 ml cream
- 1 tbs oil
- 2 tbs plain flour
- 1 tsp chicken stock powder
- 200g mushrooms
Method

Step 1Preheat oven to 180 C. Dredge fillets in flour and chicken stock powder.

Step 2Heat oil in a frying pan and brown chicken. Remove.

Step 3Saute mushrooms in the same pan and remove when cooked.

Step 4Place half the grated zucchini in the bottom of an oven proof dish and top with half the mushrooms.

Step 5Mix the cream and soup mix together and spoon a third of the mixture over the zucchini and mushrooms.

Step 6Place the rest of the zucchinis on top, add the rest of the mushrooms and one third of the cream.

Step 7Place the fillets on the mixture and spoon over the remaining cream.

Step 8Brown the breadcrumbs in the pan and sprinkle over the cream.

Step 9Cook in a moderate oven for 20-25 minutes or until the chicken has cooked.
