Ingredients

  • 4 chicken breast fillets
  • 4 slices Swiss cheese, thick
  • 4 slices double smoked ham (deli)
  • 1 cup plain flour
  • 1 egg lightly beaten
  • 1/2 cup dried breadcrumbs
  • 1/2 cup oil

Method

  • Step 1
    Slice through the middle of each chicken breast without cutting right through. Open out flat and season well.
  • Step 2
    Place a slice of Swiss cheese and ham on one half of each fillet and fold the other half over.
  • Step 3
    Season the flour well and coat the chicken fillets with flour. Shake off the excess.
  • Step 4
    Dip into the egg, then coat with the breadcrumbs. Cover and refrigerate for 30 minutes.
  • Step 5
    Heat the oil in fry pan and cook the chicken on medium for 5 minutes on each side, or until golden and cooked through. Serve immediately.
