Chicken fillets with ham and cheese in the middle.
Ingredients
- 4 chicken breast fillets
- 4 slices Swiss cheese, thick
- 4 slices double smoked ham (deli)
- 1 cup plain flour
- 1 egg lightly beaten
- 1/2 cup dried breadcrumbs
- 1/2 cup oil
Method

Step 1Slice through the middle of each chicken breast without cutting right through. Open out flat and season well.

Step 2Place a slice of Swiss cheese and ham on one half of each fillet and fold the other half over.

Step 3Season the flour well and coat the chicken fillets with flour. Shake off the excess.

Step 4Dip into the egg, then coat with the breadcrumbs. Cover and refrigerate for 30 minutes.

Step 5Heat the oil in fry pan and cook the chicken on medium for 5 minutes on each side, or until golden and cooked through. Serve immediately.
