I've always enjoyed a casserole. My partner and I created this recipe as it's perfect to tuck into on a cold night. It's an easy one-pot meal that will feed the whole family and the dumplings add something a little different to this dish.
Ingredients
- 1/4 cup plain flour
- 25 g butter
- 1 tbs olive oil
- 1 brown onion finely chopped
- 2 garlic cloves finely chopped
- 4 chicken thigh fillets skinless cut into 2cm pieces
- 250 g button mushrooms sliced
- 1 bunch fresh Italian parsley roughly chopped
- 1 1/2 cups chicken stock (liquid)
- 2 carrots sliced
- 150 ml pouring cream
- 2 tsp Dijon mustard
- 1 pinch salt and pepper *to taste
Dumplings
- 250 g self-raising flour
- 125 g butter chilled
- 1/2 cup fresh Italian parsley
- 1 pinch salt and pepper *to taste
- 1 egg beaten

Step 1Place the chicken into a plastic bag with the flour and season with salt and pepper, mix to coat all the chicken.

Step 2Heat a large casserole dish over a medium to high heat, then add in the butter and oil. Once the butter begins to foam, add in the chicken and cook until golden.

Step 3Add in the onion and garlic, and cook until the onion softens. Add in the mushrooms and carrots, and stir through and cook for a few more minutes. Add in the mustard, stock and half of the parsley, then reduce the heat to low and gently cook for about 10 to 15 minutes while you make the dumplings.

Step 4To make the dumplings: place the flour into a large mixing bowl, then add in the butter and season with salt and pepper. Rub the butter with your fingers into the flour until it resembles fine breadcrumbs. Add in the rest of the parsley and herbs, mix through and then slowly add in cold water until it binds together and you can form small balls. This will make about 12 small balls, gently roll the balls and place onto a plate, brush with the egg.

Step 5Remove the chicken casserole from the heat and add in the cream, stir through. Then gently place the dumplings around the top and bake in the oven for about 15-20 minutes, or until the dumplings are golden brown. Serve immediately and enjoy.
