A family favourite.
Ingredients
- 3 potatoes medium peeled cut into chunks
- 1 tbs olive oil
- 1 brown onion diced medium
- 2 garlic cloves crushed
- 4 bacon rashers chopped
- 250 g chicken mince
- 150 g sausage mince
- 1/2 tsp curry powder *optional
- 4 sheets Pampas puff pastry thawed
- 1 egg lightly whisked
- 1 sachet poppy seeds
- 1 sachet sesame seeds
- 1 pinch salt *to season
- 1 pinch pepper *to season
- 1 dollop tomato sauce *to serve

Step 1Cook the potatoes in salty water until very soft, then strain and mash until very smooth. Allow to cool.

Step 2Heat oil in a smaller pan, then add onion, bacon and cook until the onion is soft. Add garlic and cook for 1 second. Allow to cool.

Step 3Combine the mashed potatoes, onion mixture, minces and curry powder in a large bowl and season with salt and pepper, then mix well.

Step 4Cut each pastry sheet in half and divide mince mixture among pastry halves. Shape the mince mixture down one long side of pastry, leaving a 2cm border. Brush edges with egg, then roll to enclose filling.

Step 5Cut rolls in half, then in half again and brush with egg. Generously sprinkle with sesame seeds and or poppy seeds. Place the sausage rolls on a lightly greased baking tray and bake in a preheated oven on 200C for about 25 minutes, or until golden brown and cooked through.

Step 6Serve the sausage rolls with tomato sauce and enjoy.
