These delicious chicken, bacon and mushroom patties make a great meal on their own. They would also be amazing in a burger!
Ingredients
- 3 tbs olive oil
- 1 small brown onion, finely diced
- 100g bacon, diced
- 200g mushrooms, finely diced
- 500g chicken mince
- 1 tbs parsley, chopped
- 1 egg
- 1 cup breadcrumbs

Step 1The best way to thoroughly mix these patties is with clean, damp hands, but you can use a wooden spoon if you prefer. I used panko breadcrumbs but you could use regular or even homemade breadcrumbs if that’s what you have available. Serve with salad or as a burger with coleslaw and cheese. Step 2In a large bowl, combine chicken mince with mushroom mixture, parsley, egg and 2/3 cup breadcrumbs. Form into 8 patties. Coat lightly in remaining breadcrumbs.

Step 3Wipe out the frypan then heat remaining oil. Cook patties for 3-4 minutes each side over a moderate heat until golden and cooked through.
