Ingredients

  • 1 loaf multigrain bread
  • 425 g canned asparagus
  • 1/3 cup light sour cream
  • 2 shallots finely chopped
  • 1 1/2 cup cooked chicken finely chopped
  • 1/2 cup cheddar cheese grated
  • 3 tbs butter melted
  • 2 tsp paprika
  • 2 cloves garlic crushed

Method

  • Step 1
    Remove crusts from bread and roll bread out thinly with a rolling pin.
  • Step 2
    In a bowl combine the asparagus, cream, shallots, chicken and cheese.
  • Step 3
    Place a small amount of the chicken mixture on a slice of the bread. Roll up tightly and secure with a toothpick. Repeat with remaining bread and mixture.
  • Step 4
    Combine the butter, paprika and garlic and brush over the rolls. Place rolls on baking paper lined trays.
  • Step 5
    Bake at 200C for 10-15 minutes or until golden.
  • Step 6
    Serve hot.

Recipe Notes
Use a good brand of asparagus cuts and tips, I prefer John West brand over any of the others.
