Packed full of herb and garlic flavours and simmered in a creamy Alfredo sauce, these chicken Alfredo patties will be a winner with kids and adults alike.
Ingredients
- 500g chicken mince
- 2 clove garlic, finely chopped
- 1/2 cup (50g) garlic crackers, crushed
- 1/2 cup (50g) parmesan, grated
- 2 tsp dried Italian herbs
- 1 tbsp olive oil
- 30g butter
- 300ml cream
Method
-
Step 1In a bowl, combine chicken, 1 clove garlic, crushed crackers and parmesan. Season well with salt and pepper, and mix thoroughly. Form into 8 patties.
-
Step 2Heat most of the oil in a large frypan. Cook patties for 3-4 minutes each side until golden. Remove and set aside. Wipe out pan. Add remaining oil and butter to the pan and cook remaining crushed garlic for 1 minute until soft. Pour in cream and bring to the boil. Reduce heat, and simmer for 5 minutes until reduced and slightly thickened. Taste for seasoning and add salt and pepper if required. Return patties to pan and simmer in the sauce for 2-3 minutes to warm through.
Recipe Notes
The best way to mix the mixture and shape the patties is with your hands.
Garlic crackers are in the savoury/cheese crackers aisle of the supermarket. I used a food processor to crush them but you could place them in a ziplock bag and bash them with a rolling pin. If you don’t have crackers, replace with breadcrumbs.
