Ingredients

  • 1 kg chicken thighs
  • 1/2 cup soy sauce
  • 3/4 cup white vinegar
  • 1 1/4 cup water
  • 5 garlic clove minced
  • 2 tbs fresh ginger thinly sliced
  • 3 bay leaf
  • 1/2 tbs black peppercorns
  • 1/4 cup cornflour
  • 1/2 cup water

Method

  • Step 1
    In a large pot, brown chicken then add all other ingredients except cornflour and 1/2 cup water.
  • Step 2
    Bring to the boil over medium heat. Cover and simmer for 30 minutes.
  • Step 3
    Remove chicken from pan and add cornflour/water mixture to thicken slightly. Return chicken to pan. Serve over rice.
Recipe Notes

If you find it too sour it can be watered down more and a little sugar added. This dish has a naturally tangy flavour and should be modified to suit your taste. Chicken can be substituted for pork. Ginger is optional.
