A popular Filipino dish.
Ingredients
- 1 kg chicken thighs
- 1/2 cup soy sauce
- 3/4 cup white vinegar
- 1 1/4 cup water
- 5 garlic clove minced
- 2 tbs fresh ginger thinly sliced
- 3 bay leaf
- 1/2 tbs black peppercorns
- 1/4 cup cornflour
- 1/2 cup water
Method

Step 1In a large pot, brown chicken then add all other ingredients except cornflour and 1/2 cup water.

Step 2Bring to the boil over medium heat. Cover and simmer for 30 minutes.

Step 3Remove chicken from pan and add cornflour/water mixture to thicken slightly. Return chicken to pan. Serve over rice.
Recipe Notes
If you find it too sour it can be watered down more and a little sugar added. This dish has a naturally tangy flavour and should be modified to suit your taste. Chicken can be substituted for pork. Ginger is optional.
