These chewy golden syrup cookies are perfect for filling the biscuit tin with some homemade goodness. They’re great for lunch boxes and hungry afternoon tea guests. Whip up a batch in less time than it takes to drive to the supermarket.
Ingredients
- 125g unsalted butter
- 1/2 cup brown sugar
- 3 tbs golden syrup, plus extra for drizzling
- 1 1/2 cups self-raising flour
- 3/4 cup rolled oats
- 1/2 tsp bicarb soda
Method

Step 1Preheat oven to 170C. Line two oven trays with baking paper.

Step 2Place butter, brown sugar and golden syrup in a saucepan and stir over gentle heat until melted and smooth.

Step 3In a large bowl, combine flour, oats and bicarb soda. Add butter mixture and mix to combine.

Step 4Place dessert spoon size balls of mixture onto prepared baking paper, leaving plenty of space for spreading. Bake for 8-10 minutes.

Step 5Allow to cool on the tray, then remove to a cooling rack and drizzle with extra golden syrup.
Recipe Notes
These cookies are very soft when they come out of the oven so don’t try to move them from the tray until they’ve cooled and firmed up a little.
