Ingredients

  • 2 cups (200g) rolled oats
  • 1 1/2 cups (340g) raw caster sugar
  • 1 1/2 cups (125g) shredded coconut
  • 2 cups plain flour
  • 250g salted butter, roughly chopped
  • 4 tbsp boiling water
  • 1/4 cup golden syrup
  • 2 tsp bicarb soda

Method

  • Step 1
    Preheat oven to 190°C/170°C fan forced. Line 2 x baking trays with baking paper.
  • Step 2
    Combine oats, sugar, coconut and flour in a large bowl.
  • Step 3
    Place remaining ingredients in a medium saucepan over a medium heat and stir until the butter is melted and mixture is frothy. Pour into dry ingredients and mix to combine. Roll into tablespoon sized balls (approx. 20g), arrange on baking trays 10cm apart and press down with finger tips to flatten slightly.
  • Step 4
    Bake for 11-13 minutes or until golden.
