These delicious chewy ANZAC biscuits are delicious with a cuppa and perfect to share with friends.
Ingredients
- 2 cups (200g) rolled oats
- 1 1/2 cups (340g) raw caster sugar
- 1 1/2 cups (125g) shredded coconut
- 2 cups plain flour
- 250g salted butter, roughly chopped
- 4 tbsp boiling water
- 1/4 cup golden syrup
- 2 tsp bicarb soda
Method

Step 1Preheat oven to 190°C/170°C fan forced. Line 2 x baking trays with baking paper.

Step 2Combine oats, sugar, coconut and flour in a large bowl.

Step 3Place remaining ingredients in a medium saucepan over a medium heat and stir until the butter is melted and mixture is frothy. Pour into dry ingredients and mix to combine. Roll into tablespoon sized balls (approx. 20g), arrange on baking trays 10cm apart and press down with finger tips to flatten slightly.

Step 4Bake for 11-13 minutes or until golden.
