These cheesy baked potatoes are stuffed with a filling of cheese and herbs for an easy side to your roast dinner. - mimmy

Ingredients

  • 4 large potatoes washed
  • 1/4 cup parmesan cheese
  • 1/4 cup tasty cheese
  • 2 tsp parsley chopped
  • 2 tsp chives chopped
  • 1 x pinch salt and pepper to taste
  • 1/2 tsp potato sprinkles optional

Method

  • Step 1
    Cook potatoes in their jackets in the microwave until tender.
  • Step 2
    Remove potatoes and cut in half lengthwise.
  • Step 3
    Scoop out potato flesh in the middle and set aside, leaving a 1/2cm shell.
  • Step 4
    Mix the potato flesh with the remaining ingredients.
  • Step 5
    Spoon the filling back into potato shells and grill under the hot grill until golden brown.
