These cheesy baked potatoes are stuffed with a filling of cheese and herbs for an easy side to your roast dinner.
Ingredients
- 4 large potatoes washed
- 1/4 cup parmesan cheese
- 1/4 cup tasty cheese
- 2 tsp parsley chopped
- 2 tsp chives chopped
- 1 x pinch salt and pepper to taste
- 1/2 tsp potato sprinkles optional
Method

Step 1Cook potatoes in their jackets in the microwave until tender.

Step 2Remove potatoes and cut in half lengthwise.

Step 3Scoop out potato flesh in the middle and set aside, leaving a 1/2cm shell.

Step 4Mix the potato flesh with the remaining ingredients.

Step 5Spoon the filling back into potato shells and grill under the hot grill until golden brown.
