Cheesy French onion beef pasta bake

This beef pasta bake uses French onion soup mix to create a flavoursome, cheesy meal that is perfect for dinner tonight.

Ingredients

  • 350g Woolworths Pasta Macaroni
  • 2 tbls olive oil
  • 1 brown onion, finely chopped
  • 500g beef mince
  • 250ml (1 cup) beef stock
  • 400g can crushed tomatoes
  • 35g pkt French onion soup mix
  • 250g frozen peas, corn and carrots
  • 2 cups 3 cheese blend

Method

  • Step 1
    Preheat oven to 200C/180C fan forced. Lightly grease a 2.5L or 10 cup baking dish.
  • Step 2
    Cook macaroni according to packet instructions in boiling salted water and drain well.
  • Step 3
    Heat oil in a large frying pan over a high heat and when hot add the onion, cooking for 1-2 minutes or until translucent. Add beef and cook for 3-4 minutes or until browned. Add stock, tomatoes, soup mix and vegetables and mix to combine. Bring to the boil, then reduce heat to simmer for 5 minutes.
  • Step 4
    Stir in macaroni and 1 cup of cheese. Transfer to the prepared baking dish and sprinkle over remaining cheese. Bake for 20-25 minutes or until the cheese is golden.
