An easy cheesy cob dip made using bacon, cheeses, cream cheese, creamed corn.
Ingredients
- 200g streaky bacon, finely chopped
- 2 spring onions, thinly sliced
- 250g cream cheese
- 200g sour cream
- 100g grated mozzarella cheese
- 100g tasty, swiss or emmental cheese
- 400g can creamed corn
- 1 cob loaf, lid removed and cob hollowed out
- 2 tbsp rice bran oil
- 1 tsp sea salt
- 1 clove garlic, halved
Method

Step 1Cook bacon in a frying pan over a medium heat until crispy. Leave to cool.

Step 2Beat cream cheese and sour cream until smooth and creamy. Fold in cheeses, creamed corn, spring onion and bacon.

Step 3Rub the interior of the cob with the cut side of the halved garlic clove and discard clove. Spoon cheese mixture into the cob and fit with the lid. Wrap in 2 sheets of foil and place on an oven tray. Bake for 60 minutes. Remove foil and discard. Take the lid off the cob and cut into chunks. Pull the hollowed out bread piece into bread croutons and place in a large bowl. Pour over oil and salt and toss to combine. Arrange around the cob along with the lid chunks. Return the cob to the oven. Bake for a further 10-15 minutes or until croutons are crisp and golden.
