These Greek-style filo triangles are delicious as an entree or a main meal.
Ingredients
- 375 g filo pastry sheets
- 300 g frozen spinach
- 125 g low-fat fetta crumbled
- 250 g low-fat fresh ricotta
- 1 tbs parmesan
- 2 egg lightly beaten
- 1 tsp nutmeg
- 1 tsp oregano
- 1 pinch seasoning *to taste
- 1/4 cup butter melted
- 1/4 cup sesame seeds optional *to decorate
Method

Step 1Defrost frozen spinach in microwave. Squeeze out excess moisture using hands or sieve. Place in a mixing bowl.

Step 2Add eggs, crumbled feta, ricotta, parmesan, nutmeg, oregano and salt and pepper to mixing bowl. Mix well to combine.

Step 3Lay out one sheet of filo pastry. Brush with melted butter or spray with oil spray. Lay another sheet of filo pastry on top.

Step 4Using scissors, cut pastry into three equal strips.

Step 5Put a tablespoonful of mixture at the bottom of a pastry strip. Fold the pastry across into a triangle.

Step 6Keep folding the triangle-shaped filling up the strip until it is used up. Brush on extra butter to stick down the end, if required.

Step 7Place the triangles on an oven tray that has been sprayed with oil or covered with baking paper. Brush the top of the triangles with butter and sprinkle with poppy or sesame seeds, if desired.

Step 8Bake at 190C for 20-25 minutes until pastry is crisp and slightly browned.

Step 9Serve warm with salad.
