Quick and easy vegetarian bake, with simple ingredients.
Ingredients
- 4 potatoes medium
- 1 1/2 cups cheddar cheese
- 1/4 cup milk
- 2 tbs butter
- 1/2 onion diced large
Method

Step 1Peel potatoes and boil until tender adding onions to potatoes approximately 2-3 minutes before potatoes are ready.

Step 2Drain potatoes and onion and add 1 cup of cheese, milk, butter, salt and pepper.

Step 3Mash until smooth.

Step 4Place contents into an ovenproof dish and spread evenly.

Step 5Sprinkle ½ cup of cheese over the potato mixture.

Step 6Place under a warm grill for 5-10 minutes until cheese has turned golden brown.
Recipe Notes
If you prefer softer onions, add onions to the boiling potatoes earlier.
If you leave dish to cool for 5 minutes the grilled cheese will turn crispy, which is delicious.
This dish is nice with salad or tinned tomatoes or baked beans.
Can add chopped bacon or ham as an alternative.
