Cafes use a chai tea syrup, or powder to prepare chai latte. These prepared mixtures can be hard to find and expensive, so here's an alternative.
Ingredients
- 1 L water
- 5 cm root ginger fresh sliced
- 5 cm cinnamon quill broken into pieces
- 8 whole cloves
- 1 tsp (seeds) cardamom
- 2 star anise optional
- 10 whole allspice berries optional
- 1/2 tsp peppercorns whole
- 1/2 tsp nutmeg grated
- 1/4 cup black tea leaves
- 1 cup brown sugar
- 1 tbs honey
Method

Step 1Combine the water and all the spices in a saucepan over medium-high heat and bring to the boil.

Step 2Cover the saucepan, reduce heat and simmer for 30 minutes.

Step 3Add the tea leaves to the spice mixture and remove the saucepan from heat.

Step 4Let cool for 10 minutes to allow the tea to steep, no longer or the syrup will be bitter.

Step 5Strain the mixture into a jug through a fine mesh sieve or cheesecloth and discard spices and tea leaves. There should be approximately 2 cups of liquid.

Step 6Rinse the saucepan and return the liquid to it.

Step 7Add the sugar and honey, stirring to dissolve.

Step 8Heat to boiling and then reduce heat to a simmer.

Step 9Continue simmering, uncovered, until the liquid reduces to a syrup, approximately 1 cup.

Step 10Allow to cool for 10 minutes then pour the syrup into a sterilised bottle.

Step 11Store the syrup in the fridge.
Recipe Notes
You can use brown or white sugar.
Syrup will last for two months.
To serve, heat a cup of milk (or use ½ milk and ½ water) in the microwave. Add 2 to 3 teaspoons of the syrup. You can add more of the spices you like as this is not a strongly spiced chai syrup.
