Very simple and tasty soup which can be served either as a chunky soup or pureed.
Ingredients
- 1 tbs olive oil
- 1 onion finely chopped small
- 2 bacon rashers diced
- 1 tbs tomato paste
- 1 bunch celery heart leaves celery leaves cut into pieces
- 2 cups vegetable stock, hot
- 1 pinch salt and pepper
- 1/4 cup long-grain white rice uncooked
- 1/4 cup parmesan
Method

Step 1Heat oil in large saucepan.

Step 2Add onion and bacon, and sauté until onion is transparent.

Step 3Stir in tomato paste and celery.

Step 4Cook for 5 minutes, stirring occasionally.

Step 5Gradually stir in stock.

Step 6Cover and simmer for 20 minutes.

Step 7Stir in salt, if using, pepper and rice.

Step 8Simmer for 15 minutes, or until rice is tender.

Step 9Serve sprinkled with Parmesan, or puree then gently reheat, and serve with sour cream.
Recipe Notes
I prefer this soup pureed, and don't always serve with cream.
I either use Campbell's vegetable stock, or hot water and a Massel vegetable stock cube, both give a good flavour.
