This budget-friendly cauliflower is baked in a cheese sauce for a simple vegetarian side to tonight's dinner.
Ingredients
- 600g cauliflower
- 1 1/2 cups milk
- 1 tbs butter melted
- 2 tbs plain flour
- 1 cup cheddar cheese grated
- 2 tbs parmesan cheese grated
- 1 pinch salt and pepper to taste
Method

Step 1Boil or steam cauliflower until just cooked. Drain.

Step 2Whisk together, melted butter, milk and flour.

Step 3In a saucepan over medium heat, heat milk mixture stirring until sauce thickens.

Step 4Remove sauce from heat and set aside.

Step 5Place cauliflower in a rectangular shallow oven-proof dish and pour sauce over.

Step 6Sprinkle mixed cheeses over top.

Step 7Place in oven 180C and bake until cheese is browned and cauliflower is heated through.
