Ingredients

  • 125 g butter softened
  • 1/4 cup caster sugar
  • 1 cup self-raising flour
  • 2 tsp ground ginger

Topping

  • 60 g butter
  • 2 tbs golden syrup
  • 1/2 cup icing sugar
  • 1 cup unsalted roasted cashews coarsely chopped
  • 1/4 cup glace ginger finely chopped

Method

  • Step 1
    Preheat oven to 180C (160C fan forced). Grease a 20 cm x 30 cm lamington pan, line with baking paper, extending paper 2 cm over long sides.
  • Step 2
    Beat butter and sugar in a small bowl with electric mixer until light and fluffy. Stir in sifted flour and ginger. Spread mixture over base of pan.
  • Step 3
    Bake base for about 20 minutes of until browned lightly. Cool in pan.
  • Step 4
    Meanwhile, make topping. Stir butter, syrup and icing sugar in a small saucepan over low heat until butter has melted.
  • Step 5
    Stir in nuts and ginger.
  • Step 6
    Spread hot topping over cool base.
