You can't stop at one!
Ingredients
- 125 g butter softened
- 1/4 cup caster sugar
- 1 cup self-raising flour
- 2 tsp ground ginger
Topping
- 60 g butter
- 2 tbs golden syrup
- 1/2 cup icing sugar
- 1 cup unsalted roasted cashews coarsely chopped
- 1/4 cup glace ginger finely chopped
Method

Step 1Preheat oven to 180C (160C fan forced). Grease a 20 cm x 30 cm lamington pan, line with baking paper, extending paper 2 cm over long sides.

Step 2Beat butter and sugar in a small bowl with electric mixer until light and fluffy. Stir in sifted flour and ginger. Spread mixture over base of pan.

Step 3Bake base for about 20 minutes of until browned lightly. Cool in pan.

Step 4Meanwhile, make topping. Stir butter, syrup and icing sugar in a small saucepan over low heat until butter has melted.

Step 5Stir in nuts and ginger.

Step 6Spread hot topping over cool base.
