This simple carrot loaf is lovely and moist. Unlike carrot cake, this loaf does not have frosting, making it a healthier option (and just as delicious). - dennii

Ingredients

  • 125g margarine
  • 2 tbs golden syrup
  • 3/4 cup brown sugar
  • 1 1/2 cup self-raising flour
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 2 cup Sultana Bran
  • 2 cup carrot grated
  • 1 tsp vanilla essence
  • 2 eggs lightly beaten

Method

  • Step 1
    Preheat oven to 190C. Grease and line a 24cm x 13cm loaf tin.
  • Step 2
    Melt margarine, golden syrup and brown sugar in a saucepan over a low heat. Once combined, remove from heat and allow to cool.
  • Step 3
    Sift the flour and spices together and add to a mixing bowl with remaining ingredients.
  • Step 4
    Add the melted margarine and stir until well combined.
  • Step 5
    Place mixture into loaf tin and bake for approximately 1 hour until a skewer inserted into the centre comes out clean.
  • Step 6
    Once cooked, remove from oven, leave in tin for 10 minutes, then cool on a wire rack.
