This simple carrot loaf is lovely and moist. Unlike carrot cake, this loaf does not have frosting, making it a healthier option (and just as delicious).
Ingredients
- 125g margarine
- 2 tbs golden syrup
- 3/4 cup brown sugar
- 1 1/2 cup self-raising flour
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 2 cup Sultana Bran
- 2 cup carrot grated
- 1 tsp vanilla essence
- 2 eggs lightly beaten
Method

Step 1Preheat oven to 190C. Grease and line a 24cm x 13cm loaf tin.

Step 2Melt margarine, golden syrup and brown sugar in a saucepan over a low heat. Once combined, remove from heat and allow to cool.

Step 3Sift the flour and spices together and add to a mixing bowl with remaining ingredients.

Step 4Add the melted margarine and stir until well combined.

Step 5Place mixture into loaf tin and bake for approximately 1 hour until a skewer inserted into the centre comes out clean.

Step 6Once cooked, remove from oven, leave in tin for 10 minutes, then cool on a wire rack.
