Ingredients

  • 185 g butter
  • 1 1/2 cup caster sugar
  • 3 egg
  • 2 cup carrot grated
  • 3/4 cup walnuts
  • 3/4 cup plain flour
  • 3/4 cup self-raising flour
  • 1 1/2 tsp mixed spice

Icing

  • 60 g cream cheese
  • 30 g soft butter
  • 1 1/2 cup icing sugar

Method

  • Step 1
    Cream the butter and sugar until light and fluffy.
  • Step 2
    Beat in the eggs one at a time until well mixed.
  • Step 3
    Stir in the carrots and walnuts.
  • Step 4
    Sift in remaining dry ingredients.
  • Step 5
    Pour into a greased round cake tin and bakeat 180C for 1 hour.
  • Step 6
    Icing: Beat the cream cheese and butter until light and fluffy.
  • Step 7
    Gradually beat in icing sugar.
