The icing alone is delicious!
Ingredients
- 185 g butter
- 1 1/2 cup caster sugar
- 3 egg
- 2 cup carrot grated
- 3/4 cup walnuts
- 3/4 cup plain flour
- 3/4 cup self-raising flour
- 1 1/2 tsp mixed spice
Icing
- 60 g cream cheese
- 30 g soft butter
- 1 1/2 cup icing sugar
Method

Step 1Cream the butter and sugar until light and fluffy.

Step 2Beat in the eggs one at a time until well mixed.

Step 3Stir in the carrots and walnuts.

Step 4Sift in remaining dry ingredients.

Step 5Pour into a greased round cake tin and bakeat 180C for 1 hour.

Step 6Icing: Beat the cream cheese and butter until light and fluffy.

Step 7Gradually beat in icing sugar.
