A yummy, carrot cake with a mouth-watering, cream cheese frosting.
Ingredients
- 1 1/4 cups brown sugar
- 3/4 cup vegetable oil
- 3 eggs
- 1 1/2 cups plain flour
- 1 1/2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2 1/2 cups carrot grated
- 1/2 cup pecans chopped
- 1/2 cup sultanas
Cream cheese frosting
- 250 g soft cream cheese
- 1/3 cup icing sugar
- 1 1/2 tbs lemon juice
Method

Step 1Preheat oven to 180C.

Step 2Place brown sugar and vegetable oil in an electric mixer and beat for 2-3 minutes.

Step 3Gradually add eggs and beat well.

Step 4Sift flour, baking powder, bicarbonate of soda, cinnamon and ginger over the mixture.

Step 5Add carrot, pecans and sultanas and mix into mixture.

Step 6Place mixture into a greased and lined 22 cm round cake tin and bake for 55-60 minutes, or until clean with skewer test.

Step 7Cream cheese frosting: Process cream cheese in a food processor until smooth.

Step 8Add icing sugar and lemon juice and process until smooth.

Step 9Spread over cooled cake.
