White Christmas is my go-to Christmas treat. It so simple and easy and always a crowd favourite. You can always try substituting chopped dried apricots for the cherries and roasted macadamias for the pistachios, for a real Aussie inspired treat.
Ingredients
- 2 x 180g blocks Cadbury Caramilk chocolate
- 2 cups rice bubbles
- 3/4 cup coconut flakes
- 100g mini white marshmallows
- 50g pistachios, roasted and roughly chopped
- 20g pkt glace cherries
Method

Step 1Line a 26cm x 16cm slice tin with baking paper.

Step 2Microwave Caramilk in 1 minute bursts, in a heatproof bowl, stirring between each burst until the chocolate has melted. Alternatively, place bowl over a saucepan of simmering water and stir until melted. Cool.

Step 3Combine remaining ingredients in a large bowl, pour over chocolate and mix to combine.

Step 4Pour into prepared tin and press down firmly. Refrigerate until set.

Step 5Cut into squares or wedges.
