No-bake Caramilk hedgehog slice

With caramel flavours in the biscuit base, and a thick Caramilk topping, this Caramilk hedgehog slice is an easy no-bake sweet, perfect for lunchboxes and afternoon tea. - Greer Worsley

Ingredients

  • 250g Milk Arrowroot biscuits
  • 125g butter
  • 2 tbsp golden syrup
  • 1/2 cup condensed milk
  • 270g Caramilk chocolate

Method

  • Step 1
    Line an 18cm x 25cm slice tin with baking paper. In a food processor, blitz 2/3 of the biscuits into a fine crumb. Transfer to a bowl. Break or chop remaining biscuits into small pieces and add to bowl with crumbs. Combine butter, golden syrup and condensed milk in a saucepan over gentle heat and stir until butter has melted. Add to biscuits and mix well. Press evenly into prepared tin, smoothing the top.
  • Step 2
    Melt Caramilk in the microwave in short bursts until smooth. Pour over biscuit base. Refrigerate for 1-2 hours until chilled and set.
Recipe Notes

Makes 12 squares.

+ 2 hours refrigeration.

You can blitz the entire packet of biscuits but a hedgehog slice traditionally has some larger pieces in it for texture.

If you don’t have a food processor, you can place the biscuits in a zip lock bag and bash with a rolling pin.

This recipe uses 1 1/2 180g packets of Caramilk. 1 packet will suffice but your topping will be much thinner.
