This is a yummy twist on the classic lattice slice, and while it looks impressive, it is so easy to make!
Ingredients
- 200g Lattice biscuits
- 500g cream cheese
- 1/2 cup brown sugar
- 1 1/2 tsp golden syrup
- 1 1/2 tsp vanilla extract
- 2 egg
Method

Step 1Preheat your oven to 150C and line a 20cm x 20cm cake tin with baking paper.

Step 2Place a layer of the lattice biscuits sugar side down along the bottom of the lined tin.

Step 3Place the softened cream cheese, brown sugar, vanilla extract and golden syrup into the bowl of an electric mixer and beat for 6 - 8 minutes or until the mixture is smooth and the sugar has dissolved.

Step 4With the mixer still going, add the eggs one at a time and continue to mix until combined.

Step 5Pour the caramel cheesecake mixture over the top of the lattice biscuits already in the prepared tin and lightly smooth the surface.

Step 6Cover the surface of the cheesecake with lattice biscuits, placing them sugar side up and place the tin into the oven for 45 minutes or until it has a little give when tested.

Step 7Allow the cheesecake to cool on your bench for 10 minutes before transferring it to the fridge to cool completely - give it at least 2 hours.

Step 8Once chilled, remove from fridge and tin and cut into pieces.

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
