A banana cake with a delicious caramel icing!
Ingredients
- 1 1/2 cup self-raising flour
- 3 banana large mashed ripe
- 3/4 cup sour cream
- 1 tsp bicarbonate of soda
- 1 tbs milk
- 125 g butter
- 3/4 cup brown sugar firmly packed
- 2 egg lightly beaten
Caramel icing
- 1 1/2 cup icing sugar sifted
- 1/2 cup brown sugar
- 2 tbs sour cream
- 60 g butter
Method

Step 1Preheat oven to 180C and grease and line a 15 x 25 cm loaf tin.

Step 2In a large bowl using electric mixer, cream butter and sugar together until light and fluffy. Beat in eggs one at a time until well combined.

Step 3Add mashed bananas, half the flour and all the sour cream and bicarbonate of soda. Stir in the rest of the flour and milk until well combined.

Step 4Pour into loaf tin and bake for 55-60 minutes until cooked.

Step 5Leave to cool in tin for 5 minutes before turning onto wire rack to cool off completely.

Step 6For the caramel icing, melt butter and sugar in saucepan on medium heat and stir until sugar dissolves. Blend in sour cream and bring to the boil.

Step 7Remove from heat and stir in icing sugar until well combined. Cool until icing is a spreadable consistancy. Spread icing over cake. Store in an airtight container.

Recipe Notes
You can use 2 or 3 large ripe bananas. This cake was very yummy and went down a treat at my neices birthday party.
