Ingredients

  • 1 cup boiling water
  • 1 tsp bicarbonate of soda
  • 350 g dates
  • 50 g butter
  • 1 cup soft brown sugar
  • 2 egg
  • 1 1/2 cup plain flour
  • 2 tsp baking powder
  • 1 cup pecans
  • 1/2 tsp salt

Syrup

  • 1 1/2 cup sugar
  • 3/4 cup water
  • 1/2 cup brandy
  • 1 tsp vanilla extract
  • 1 tbs butter

Method

  • Step 1
    Dissolve bicarbonate of soda in hot water and pour over dates. Allow to cool.
  • Step 2
    Cream butter and sugar. Add eggs.
  • Step 3
    Sift in dry ingredients, nuts and dates with the liquid the were in.
  • Step 4
    Pour into a casserole dish or two pie plates and bake at 180C for 45 minutes.
  • Step 5
    Syrup: Boil sugar and water for 5 minutes.
  • Step 6
    Remove from heat and add remaining ingredients.
  • Step 7
    Pour over cooked tart.
  • Step 8
    Serve hot or cold with whipped cream.
