A fruity, hot pudding for cold days served with double whipped cream. This is a traditional South African recipe that came from the Cape.
Ingredients
- 1 cup boiling water
- 1 tsp bicarbonate of soda
- 350 g dates
- 50 g butter
- 1 cup soft brown sugar
- 2 egg
- 1 1/2 cup plain flour
- 2 tsp baking powder
- 1 cup pecans
- 1/2 tsp salt
Syrup
- 1 1/2 cup sugar
- 3/4 cup water
- 1/2 cup brandy
- 1 tsp vanilla extract
- 1 tbs butter
Method

Step 1Dissolve bicarbonate of soda in hot water and pour over dates. Allow to cool.

Step 2Cream butter and sugar. Add eggs.

Step 3Sift in dry ingredients, nuts and dates with the liquid the were in.

Step 4Pour into a casserole dish or two pie plates and bake at 180C for 45 minutes.

Step 5Syrup: Boil sugar and water for 5 minutes.

Step 6Remove from heat and add remaining ingredients.

Step 7Pour over cooked tart.

Step 8Serve hot or cold with whipped cream.
