This banana bread is so delicious. This is my own creation and is a family favourite!
Ingredients
- 1/2 cup margarine
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 tbs extra light olive oil
- 3 banana medium ripe
- 1/2 tsp ground cinnamon
- 1/3 tsp mixed spice
- 1 tbs bicarbonate of soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1 tsp lemon juice
- 2 cup plain flour
Method

Step 1Preheat oven to 180C and line a 23 cm loaf tin with baking paper.

Step 2Place margarine and sugars in a large bowl.

Step 3Beat with an electric mixer on medium speed for 3-4 minutes, or until light and fluffy.

Step 4Add oil and vanilla essence and gently fold into the mixture.

Step 5Mash bananas and gently fold into the mixture.

Step 6Sift cinnamon, mixed spice, bicarbonate of soda, baking powder and salt into the mixture.

Step 7Combine milk and lemon juice.

Step 8Sift 1 cup of flour and ¼ cup of milk into the mixture.

Step 9Fold gently and repeat with remaining flour and milk.

Step 10Bake for 45-55 minutes, or until a skewer inserted in the middle comes out clean.
Recipe Notes
Canola or vegetable oil can be used in place of olive oil.
If mixture seems dry, add a splash of milk for desired consistency.
Any fruit can be used in place of banana.
Wholemeal flour works just as well if preferred.
Tastes beautiful toasted with a nice spread of margarine and a drizzle of honey.
