This banana bread is so delicious. This is my own creation and is a family favourite! - Lauren_21

Ingredients

  • 1/2 cup margarine
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 tbs extra light olive oil
  • 3 banana medium ripe
  • 1/2 tsp ground cinnamon
  • 1/3 tsp mixed spice
  • 1 tbs bicarbonate of soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 tsp lemon juice
  • 2 cup plain flour

Method

  • Step 1
    Preheat oven to 180C and line a 23 cm loaf tin with baking paper.
  • Step 2
    Place margarine and sugars in a large bowl.
  • Step 3
    Beat with an electric mixer on medium speed for 3-4 minutes, or until light and fluffy.
  • Step 4
    Add oil and vanilla essence and gently fold into the mixture.

    Mash bananas and gently fold into the mixture.
  • Step 6
    Sift cinnamon, mixed spice, bicarbonate of soda, baking powder and salt into the mixture.
  • Step 7
    Combine milk and lemon juice.
  • Step 8
    Sift 1 cup of flour and ¼ cup of milk into the mixture.
  • Step 9
    Fold gently and repeat with remaining flour and milk.
  • Step 10
    Bake for 45-55 minutes, or until a skewer inserted in the middle comes out clean.
Recipe Notes

Canola or vegetable oil can be used in place of olive oil.

If mixture seems dry, add a splash of milk for desired consistency.

Any fruit can be used in place of banana.

Wholemeal flour works just as well if preferred.

Tastes beautiful toasted with a nice spread of margarine and a drizzle of honey.
