Ingredients

  • 150 g frozen mixed berries
  • 280 g plain flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 115 g caster sugar
  • 2 medium eggs
  • 250 mL buttermilk
  • 6 tablespoons sunflower oil or 85 g butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Icing sugar, for dusting

Method

  • Step 1
    Preheat oven to 200C. Grease or line a 12 cup muffin tin.
  • Step 2
    Cut any large berries into smaller pieces.
  • Step 3
    Sift flour, baking powder and salt into a large bowl. Stir in sugar.
  • Step 4
    Lightly beat eggs in a separate bowl or jug then beat in buttermilk, oil and vanilla.
  • Step 5
    Make a well in centre of dry ingredients, pour in liquid ingredients and add berries.
  • Step 6
    Stir gently until just combined. Do not over mix.
  • Step 7
    Spoon mix into prepared tin. Bake for approximately 20 minutes or until golden and firm to the touch.
  • Step 8
    Leave in tin for 5 minutes then transfer to a rack to cool.
  • Step 9
    Dust with icing sugar to serve.
Recipe Notes

Only mix until just combined or your muffins won't be light and fluffy.
