A light, fluffy and moist muffin made with frozen berries.
Ingredients
- 150 g frozen mixed berries
- 280 g plain flour
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 115 g caster sugar
- 2 medium eggs
- 250 mL buttermilk
- 6 tablespoons sunflower oil or 85 g butter, melted and cooled
- 1 teaspoon vanilla extract
- Icing sugar, for dusting
Method

Step 1Preheat oven to 200C. Grease or line a 12 cup muffin tin.

Step 2Cut any large berries into smaller pieces.

Step 3Sift flour, baking powder and salt into a large bowl. Stir in sugar.

Step 4Lightly beat eggs in a separate bowl or jug then beat in buttermilk, oil and vanilla.

Step 5Make a well in centre of dry ingredients, pour in liquid ingredients and add berries.

Step 6Stir gently until just combined. Do not over mix.

Step 7Spoon mix into prepared tin. Bake for approximately 20 minutes or until golden and firm to the touch.

Step 8Leave in tin for 5 minutes then transfer to a rack to cool.

Step 9Dust with icing sugar to serve.
Recipe Notes
Only mix until just combined or your muffins won't be light and fluffy.
